CUBA DINING HABITS GEOGRAPHIC SETTING: The Republic of Cuba consists of one large island and several small ones situated on the northern rim of the Caribbean Sea. The food diet of Cubans relies only on those agricultural products which are useful for growth in the island. 2 HISTORY OF FOOD The mixture of both Spanish and African cultures formed the base of Cuban food . Citrus fruits such as lemons and oranges were brought by Spanish along with rice and vegetables. They also grew sugar cane, a major Cuban crop. Africans advanced a taste for fruits and vegetables such as maize (corn), okra, and cassava. 3 FOODS OF THE CUBANS Spain and Africa add most to Cuban cuisine. The Cuban food is not based on seasonings, sauces etc. The most popular food of Cuba is black beans and meats. Root vegetables are most often flavoured with mojo, a mixtures of lemon juice, onions, garlic, and cumin olive oil. The most common meals based those made with pork, chicken, rice, beans, tomatoes, and lettuce. Hot spices are rarely used in Cuban cooking. Fried (polo Frito) or grilled (polo as ado) chicken and grilled pork chops are Fried plantains, like white rice and black beans, are part of almost every dinner menu. In Cuba, the plantains would be fried in oil about one inch deep. 4 Food timings: the breakfast is served between 7-10 am, lunch from 1-3 pm and dinner after 7 pm.
